Glutenfreier Kaiserschmarrn

Gluten-free Kaiserschmarrn

Enjoy delicious Kaiserschmarrn gluten-free and wheat-free. Yammie.

For the recipe you need the following ingredients:

5 eggs, separated
1 pinch of salt,
150g milk (or alternative),
60g cane sugar (or alternative),
120g gluten-free flour mix ,
some vanilla,
2 teaspoons grated lemon zest (also available as a packet in health food stores),
2 tablespoons butter,
2 tbsp raisins,
2 tablespoons icing sugar (cane sugar or coconut blossom sugar) for sprinkling.

Preparation :

Pre heat the oven to 180 degrees celcius.

Beat the egg whites and salt until stiff (use the TM5 mixer attachment, without measuring beaker 6 mins/speed setting 3.5).

Pour the ice cream into a bowl. (Remove TM5 mixing attachment).

Put the milk, sugar, gluten-free flour mix and lemon zest in a bowl and mix. Meanwhile gradually add the egg yolks. (TM5 30 sec/level 4).

Add the egg whites and fold in. (TM5 30 sec/level 3).

Heat an ovenproof skillet on the stove. Melt organic clarified butter or butter in the frying pan.

Pour in the batter, sprinkle with raisins and bake over a medium heat for about 3 minutes until golden brown. Divide the dough into four parts, turn, bake on the second side and finish baking in the oven (180 degrees) for 5 minutes.

Tear the Kaiserschmarrn into small pieces with two forks, sprinkle with powdered sugar and serve.

Depending on the oven, the baking time may need to be increased.
