Gluten free pancakes

Whether sweet or savory, if you want to make gluten-free pancakes yourself, here is our recipe for you.

For the recipe you need the following ingredients:

230g gluten-free pancake mix ,
50g butter,
2 eggs,
300ml milk,
ingredients topping,
2 tbsp coconut oil or butter,
Cinammon,
Vanilla,
1 pinch of salt,
maple syrup,
3 apples (Pink Lady, Gala, Jona Gold or from your own garden),
cranberries,
pecans.

Preparation:

Pancakes

(Preparation time about 4-5 minutes per pancake)

Melt 50g butter and put in a bowl. Add 300ml milk, 2 eggs and baking mix. Stir for 1 minute.

To cook the pancakes, heat 1/3 tsp butter in a small skillet on the stove. For each pancake, add 1/4 cup of batter to pan and cook until bubbles pop on top, 1-2 minutes.

Flip the pancakes and cook the other side for 1 minute.

Put the pancakes on a plate, cover with a second plate and keep warm. Repeat the process until the rest of the dough is used up. Serve hot.

Preparation topping : (preparation time 15 minutes)

Cut the apples into pieces with the skin on. Cover and cook the apples in a non-stick pan with a dash of water until they soften.

Add all the ingredients to the apples in the pan. Mix well and continue to cook covered. Please stir occasionally.

In another small pan, lightly toast as many pecans as you like.

When the apples have softened, remove the lid and allow the remaining liquid to simmer until the apples are brown and slightly caramelized.

Garnish the finished pancakes generously with apples, some cranberries and powdered sugar and eat immediately.
