Italian gluten-free pasta with Nonna Sofia

Italian fresh pasta - a dream that can come true and it's not as difficult as you might think. You can make delicious pasta with our gluten-free organic flour mix .

For the processing of the ingredients and the consistency of the dough, please watch the film. The quantities given are not exact, as the size of the eggs often varies, and with it the consistency of the batter. Kneading by hand should give you a buttery dough. Gradually process the dough. If the dough becomes dry, be sure to knead it again to get the buttery consistency. You are welcome to cover the rest of the dough and the finished pasta so that they do not dry out so quickly. Cook the finished pasta immediately "al dente" and serve.

The pasta shape in our film is tagliatelle. Tagliatelle are typical pasta from Calabria. They are best made by using speed 5 on the manual pasta machine for the slabs and then slicing the tagliatelle.

We used La Cascina 1899's unique Corte d'Assise sauce. You can order them online or just enjoy the delicious pasta with olive oil and parmesan.
